Garlicky Roasted Squash

For the second time this year I am being inundated with yellow squash. Our Fall crop is starting to come in and it seems to be just as aggressive as our Summer crop. Chuck, the gardener of the house, is like the Squash Whisperer=) You'd think by now we'd be burnt out, but there is something that never gets old about eating something you've grown yourself.

This is one of our favorite, and coincidentally, simplest preparations. It's all done to taste so tweak the amounts to your liking.

Garlicky Roasted Squash



3 lbs yellow squash, sliced in rounds 1/4 in. thick
3 cloves garlic, minced
4 tbsp olive oil
Salt
Pepper

Preheat the oven to 375 degrees. Toss all of the ingredients together until evenly coated and distributed before putting them in an 8x8 baking dish. Bake for 40 minutes,or until tender, stirring occasionally so no squash gets over cooked. Serve and enjoy!



This is without a doubt a garlic lovers dish. You can up the garlic as much as you want, but prepare to have your house fill with the tantalizing aroma as it roasts. If your squash starts to get too dry in the oven, simply add a little more olive oil and you'll have no issues. We served this with the dreamiest healthiest turkey stroganoff ever, a recipe I'll post soon. Enjoy!
